Good morning readers.

Sorry I haven't updated this as often as I would have liked but between being in the hospital and everything else going on, this is the first chance i have gotten to post a new recipe. I am feeling much much better now and I should be able to post more often.
Now let's see what we've got brewing in the cauldron this morning...
For today's enjoyment we have a taco salad. This is a recipe that you can do only half of if you like. In fact if you aren't taking it to a party or picnic or feeding a bunch of people, you might want to cut it in half. It does make quite a bit.
I make this all the time for picnics when I have the ingredience and when I do it goes pretty quickly.

PARTY TACO SALAD

INGREDIENTS:

2 lbs ground beef
2 packages taco seasoning mix
16 ounces cheddar cheese, shredded
1 red onion, chopped
1 yellow onion, chopped
2 heads iceberg lettuce, chopped
4 tomatoes, chopped
2 avocados, chopped
1 can black olives, chopped
1 large bag of Doritos nacho chips, crumbled
1 8-ounce bottle Catalina salad dressing

DIRECTIONS:

Brown ground beef with chopped yellow onion. Add 1 package
of taco seasoning and water according to package directions.
Set aside to cool completely. In a large bowl mix together
chopped lettuce, tomato, cheese, avocado, red onion,
olives, and 2nd package of taco seasoning. Add cooled beef
mixture. Just before serving toss with the dressing and the
last step is to mix in 3/4 of the package of crushed Doritos,
leaving the rest on the side for people who want extra.
(they get soggy if you do them too early.)

I'd like to start by wishing each and every one of you a very happy and safe 4th. No matter what you are doing today, I hope that it's fun and that your family gatherings will have lots of good things to eat. And now onward with some recipes!
Today there will be three recipes for you to check out. I will put them all behind cuts, that way you can look at the ones that appeal most to you. All three have a 4th of July theme to them. Well the first one isn't but all picnics need some sort of beverage.

Strawberry-lemonade Iced Tea )

The second is a very good recipe that you can do for picnics or any time of the summer really. You may want to double or even triple the recipe depending on how many people are in your family.

The last one I'm going to post is a great dessert, yeah they are just cookies but really good and real easy to make and bring to a picnic. And the good thing is? No mess while at your gathering.

This recipe isn't titled 4th of July anything however, in my personal oppinion no picnic or family gathering is complete without a fruit salad. My grandmother makes this for family gatherings and it goes very quickly.
When i make it, i modify it a bit because i add apples and grapes. Sometimes i get really craving fruits and add blueberries and strawberries as well.

Grandma's Fruit Salad

Ingredients:

1 can fruit cocktail
1 can crushed pineapple
3 1/2 oz. box vanilla instant pudding
1 can mandarin oranges
1 (8 oz.) Cool Whip
1 c. colored marshmallows
2 bananas

Directions:

Mix fruit, cocktail and pineapple with the juices. Then mix in the pudding and let thicken for 10 minutes. Drain oranges and add, then add Cool Whip and marshmallows. Chill 2 hours and add bananas before serving.

Hi and welcome once again to the Cauldron.

In the cauldron today I have brewing another recipe that is really good for the 4th of July. This particular brew calls for walnuts, I personally don't like them so instead I have used almonds and it turns out just as good. I might try to use cashews the next time and see how that goes.

4TH OF JULY DESSERT

2 boxes raspberry jello
2 1/2 c. hot water
1 envelope plain gelatin
1/2 c. cold water
1 c. half and half cream
1 c. sugar
1 tsp. vanilla
8 oz. cream cheese
1/2 c. walnuts
1 (15 oz.) can blueberries

Note: Allow each layer to gel about 2 hours before next one is made.

First Layer Red: Dissolve 1 box jello in 1 3/4 cups hot water. Pour into
oblong or square dish. Allow to gel (2 hours).

Middle Layer White: Dissolve plain gelatin in 1/2 cup cold water. Heat cream
and sugar without boiling. Add this to gelatin mixture. Add vanilla and
cream
cheese. Whip with mixer until smooth. Add walnuts and pour over first red
layer (set 2 hours).

Third Layer Blue: Dissolve the other box of jello in 3/4 cup hot water,
adding the juice from the can of blueberries. Add blueberries to jello
mixture and
pour over other layers. Let set. Serve plain or with whipped cream.

Good evening readers.

Being that this coming up Monday is The 4th of july, I thaught i'd give you all some ideas of what you can make to bring to those family picnics or make at home if you are the one hosting the gathering. I will try to post recipes through out the weekend for you.
This first recipe is a very good one and it's easy to do as well. Oh and did I forget to mention very tasty?

4TH OF JULY PIE

1 pt. blueberries
20 to 25 strawberries, hulled
whipped cream
1 (3 1/4 oz.) pkg. regular vanilla pudding mix
2 c. milk
1 (8 oz.) pkg. cream cheese, softened
1/2 tsp. vanilla
1 (8 inch) graham cracker pie crust

Combine pudding mix and milk in saucepan. Bring to a full boil over medium
heat, stirring constantly. Remove from heat. Add cream cheese and stir until
smooth. Add vanilla. Let mixture cool for 5 minutes, stirring twice. Pour
pudding mixture into pie crust. Refrigerate 3 hours or overnight. Place
strawberries
in circle on outer edge of pie. Place one in center. Place blueberries over
remaining pudding. Served chilled with whipped cream on top.

Greetings to all you peoples.

Happy late Memorial Day to all! I know I'm late but ah well, I just wasn't in a writing mood yesterday so it just didn't get said. I hope everyone had fun with family and friends, I hope lots of food was consumed and that you all had fun swimming or whatever it was you did. As for me, I didn't do much of anything. It was soooooooo hot and humid that I decided that i was gonna stay inside where it was cool. There are definite advantages to living six feet under, it tends to stay somewhat cool in the house. It can still get pretty humid which is pretty nasty but the temps are alright.
I came across this recipe that I was going to post before Memorial Day because I thaught that it would make a nice dessert to bring to a picnic. There were actually two of them but I decided to just post the one for today. I have had different variations of this but I found this one to be very very good because it has all my favorite fruits on it. One of the ingredience it calls for is orange marmalade or Apple jelly, I choose the apple jelly because well, if I had to be completely honest with myself on this issue, I can't stand the taste of orange marmalade. *grins*

The best Fruit Pizza

1 tube refrigerated sugar cookies
1/2 c. apple jelly or orange marmalade
2 tubs cheesecake flavored spreadable cream cheese
1 pt. strawberries
1 pt. blueberries
3 kiwi fruit
mandarin oranges (optional)

Preheat oven to 350F. Cut cookies into slices. Arrange on ungreased
pizza pan and press together to form a crust. Bake for 12 - 15 minutes
or until just golden. Cool crust.

Spread cream cheese over cooked crust. Arrange fruit in decorative
pattern over top of cream cheese. Melt jelly or marmalade in the
microwave for 30 seconds or until liquefied; stir. Brush melted jelly
over top of fruit. This aids in keeping fruit fresh and gives it a nice
sheen. Refrigerate and cut into wedges.

So I'm sitting here at work and i'm not sure whether to be amused or freaked out...The wind is blowing really really hard and it keeps blowing our office door open. It's really freaky because I have never been in that kind of a situation before, oddly enough it's the same reason why I'm amused. Strange I know but that's me. I don't mind being strange because it's what keeps me apart from the ones who define themselves as normal. What's normal anyway? LOL!

I told you all about my new friends I made and I'm not sure anymore what to think. I have learned two things
1. They are really into drama it seems. Everytime I talk to them there seems to be one dramatic thing or another going on and I am just too old for that. I just hate drama with a passion!
And 2. If you do or say one thing wrong it seems that they treat you as if you are an outcast. They all jump all over you and kick you out of the skype call or chat window without telling you they are doing it. It's almost like they shun you until you apologize to them for being who you are.
Oh and there's a third thing i have learned and that is, if you are friends with someone they don't approve of or that they quote, end quote hate, they all jump allover you until you end the friendship with the person they are all against. Can we say high school all over again? I mean come on, childish much?
There are a few who are pretty cool however and I'll be hopefully keeping in touch with them. I need to have a one on one with one of them to see if I can get some things straightened out. I still like all of them I just need to talk to some of them and see if I can get things fixed. I apparently was kicked out of the chat window for no apparent reason. The last message I saw from them indicated to me that I had done or said something wrong. Not sure what but whatev', I'll work it out. I don't like all the drama though, I can do without all of that mess. My above stated feelings still stand however.

Well, I'm off for now. I'm in the last 45 minutes of work and then I'm going out with Deborah. I think I'm gonna go and see if i can get a couple of new shirts for work. Don't know what I'll find but it's worth a look anyhow.
