Taco Casserole
Sep. 17th, 2011 07:14 amGood morning all from The Cauldron.
Today we have brewing a favorite casserole of mine. It's very tasty and a sure way to get kids to eat vegetables. I used to make it for my daycare kids all the time. Now, you may want to double or even triple the recipe depending on how many you are making it for, or for those men in your life that like to eat a lot.
Taco Casserole
Ingredients:
3 cups uncooked bow tie pasta
1 pound ground beef
1/4 cup chopped onion
2 cups Shredded cheddar cheese (8 ounces)
1 jar (16 ounces) salsa
1 can (14-1/2 ounces) diced tomatoes, undrained
1 envelope taco seasoning
2 cups nacho tortilla chips crushed
Instructions:
Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the cheese, salsa, tomatoes and taco seasoning. Drain pasta; stir into beef mixture.
Transfer to a greased 11-in. x 7-in. baking dish. Cover and bake at 350° for 20 minutes. Uncover; sprinkle with tortilla chips. Bake 10 minutes longer or until heated through.
Yield: 7 servings.
That's it for this week. I am, or rather I have decided to post the recipe weekly since I am more likely to update this thing.
Also for those of you who use dropbox and would like an invite to Lily's Cauldron, please let me know and I'll get you added. In there you will find the recipes I post here and so many many more.
If you have a recipe that you'd like to see posted, let me know and I'll get it posted for you. Have one you'd like to share? Drop me a comment and we can get it all set up.
Until next time...
